Profile

Dr. Satyanarayan Dev is an Assistant Professor in the Department of Food Science, A’Sharqiyah University, Sultanate of Oman. He received his M.Sc and PhD in 2007 and 2010 respectively from McGill University with an interdisciplinary background in food science, microbiology, and food engineering. His research interests are in the areas of food safety, pathogen detection, nutraceuticals and functional foods. He obtained his Bachelor of Technology degree in Food Process Engineering from Tamil Nadu Agricultural University, India in 2004. He has worked as a Postdoctoral Fellow in the Department of Agricultural and Biological Engineering at the Pennsylvania State University, USA.

His research projects have focused on food safety, Value addition, Nutritional quality, process optimization, modeling and simulation of food processing operations, electromagnetic equipment design for food processing etc. He has recently been involved in research projects dealing with the equipment design, optimization and scale up using electro technology for pasteurization of in-shell eggs, electrolyzed oxidizing water for Clean-in-place food safety applications, assessment of nutritional quality of lentils processed using conventional and non-conventional techniques, novel pretreatments for drying and with the design and operation of twin chamber heat treatment apparatus for enhancing the quality and extend the shelf life of fruits and vegetables.
