The European Green Crab, a hardy invasive species, has wrecked havoc on Nova Scotia’s coastal life. Audrey Moores’ lab teamed up with Parks Canada to harvest the crabs and extract chitin from their shells, turning it into resilient, biodegradable plastics. Their method creates new value crustacean shells — an abundant by-product of the fishing industry.
