Short Bio

Dr. Rose is involved in university teaching and dietetics student supervision at the graduate and undergraduate level in Clinical Nutrition, Community Nutrition and Foodservice Management, and is Coordinator of graduate dietetics programs. Her current research interests are mainly focused around the attempts of community organizations to alleviate food insecurity and/or prevent chronic conditions, such as diabetes and cardiovascular diseases, through community kitchen and workshop activities. These include providing nutrition education and opportunities to develop budgeting, food choice, and food preparation skills.

In 2017, Dr. Rose initiated a once-a-month Lunch and Learn program for local older adults, which continues to be offered. This includes a nutrition education presentation, a lunch, and take-away materials, all based on a specific food-related theme, which continued by meal delivery and virtual presentations during the Covid-19 pandemic.

Dr. Rose organizes internships in Caribbean community organizations and First Nations communities, mostly in Northern Quebec and Nunavut, providing an opportunity for dietetics students to develop cultural competency skills and make a contribution to healthy living in these areas.

Research Interests

  • The acceptance and effect of food assistance activities, such as food banks, Good Food Box initiatives, and community kitchens.
  • The effects of on-site/off/site work schedules on eating behavior and workers’ ideas about their nutritional health.
  • Nutrition education for children, adults, and seniors and its effect on nutrition knowledge and acceptance of a greater variety of healthy foods.
  • Methods of arriving at accurate nutrient analysis of menu items.

Current Research

Dr. Rose’s current research includes studies on:

  • The acceptance and impact of the FoodFit program for disadvantaged adults, comprising weekly sessions of nutrition education, physical activity, and group cooking and tasting.
  • The effects on eating behavior and perceived nutritional health of on-site/off-site work schedules.
  • The impact of summer camp nutrition education sessions on children’s knowledge of local produce and acceptance of a greater variety of vegetables
  • Eating behavior and perceptions of nutritional health in Caribbean and First Nations communities.
  • Development and evaluation of a method to derive an accurate nutrient analysis of menu items.
  • Pilot testing, with undergraduate nutrition students, of learning modules on the new 2022 labelling guidelines.

Through supervising students in the M.Sc. Applied program (dietetics credentialing, project, and practicum options), Dr. Rose is involved in projects for the Dietitians of Canada Practice Evidence-based Nutrition (PEN) online resource. In addition, a significant part of Dr. Rose’s work over a number of years, has been preparing, animating, and evaluating workshops for preceptors on fostering professional development in students and others.

Dr. Rose’s doctoral research was an investigation of interns’ and preceptors’ perceptions of the Competencies for Entry-Level Practice of Dietitians of Canada and the perceived opportunities available to develop those.
